Mango Chicken Kabobs

Plain Jane grilled chicken gets an update with my delicious, summery marinade! Coconut milk and mangoes team up to make juicy, tender chicken. Dice up and stick on skewers for a fun take on a dinner time staple.

Marinade
  1. 1 can of coconut milk, solids discarded.
  2. 1 cup ripe mango
  3. The juice of 1 lime
  4. 2 cloves garlic
  5. 1 tsp. salt
  6. 1/2 tsp pepper
  7. 1/2 tsp paprika
  8. Sprinkle of red pepper flakes (optional)
Chicken
  1. 2lb diced chicken breast
  2. Skewers
Instructions
  1. Add all ingredients to a blender.
  2. Mix well.
  3. In a plastic resealable bag, add 2 lb diced chicken and pour marinade overtop.
  4. Let sit for 1-12 hours in the refrigerator.
  5. Add chicken to skewers to make kabobs.
  6. Grill and enjoy!
